A Weight Loss Recipe from Our Health Coach: John Moniello

John’s Squashed Meatloaf

Here at Stony Creek Wellness, we’re ALL ABOUT: High Protein! Low Carb! Veggies! Say these three words aloud to yourself every morning (with the optional “Fruit!” chant recommended) and you will have one happy, healthy body in no time – especially when coupled with our fantastic weight loss program here in Branford, Connecticut.

This is one of my favorite, simple healthy recipes for home:

1 lb. ground chicken or turkey
1/2 green pepper
1 med. Size green zucchini
½ basket sliced baby bella mushrooms

1) Chop ½ the green pepper, 1 medium sized zucchini and ½ basket of mushrooms and add to the meat In a large bowl.

2) Add ¼ cup egg whites, a few shakes of sea salt, black pepper, onion powder and garlic powder (season to your own taste) and a teaspoon of olive oil.

3) Mix well. Line a baking pan with aluminum foil and olive oil spray. Form the mixture into a flat (squashed) oblong patty approx 1-1 ½ inch thickness.

4) Bake at 400 for 20 minutes. There should be a little water in the pan from the veggies after cooking. Drain off and broil for a couple of minutes or until it browns a little.
